The boy and I discovered our love for chick pea salad when we visited the grocery store one afternoon. Both hungry we decided to buy it for a quick munch and we equally decided this was our new favourite snack. After going back to get it each time we visited that particular store, we decided to make it ourselves. It’s a great summer side dish for dinner at home or for a backyard party/BBQ. Below is my own version, but feel free to add whatever you like to your version (maybe cumin, red pepper flakes or balsamic vinegar).
One can of chick peas-drained and rinsed
¼ olive oil
½ a sweet red bell pepper-chopped
½ a sweet orange bell pepper- chopped
½ a sweet yellow bell pepper- chopped
½ a red onion- thinly diced
Two celery sticks- chopped
One tomato seeded and chopped
Pinch of garlic powder
Salt and pepper to season
Use peppers you personally enjoy, and increase amounts depending on the event your salad will be taking place at. Best made the night before to soak up all of the lemon and olive oil- Enjoy!
